Thai Chicken Skewers with Peanut Sauce

YUM!!!! This looks absolutely amazing!

Ingredients

For the Chicken:
    • 3-4 boneless skinless chicken breasts, cut into 1-inch chunks
    • 1/2 cup coconut milk
    • 1/4 cup tamari
    • 2 tablespoons brown sugar (or coconut sugar)
    • 2 cloves garlic, minced
    • 1 teaspoon fresh ginger, grated
    • Juice of 1 lime
    • 1 teaspoon coriander
    • 1/2 teaspoon cumin
    • 1/2 teaspoon turmeric
For the Peanut Sauce:
  • 1 tablespoon coconut oil (or cooking oil of choice)
  • 1 tablespoon Thai red curry paste
  • 1 tablespoon packed brown sugar
  • 2 garlic cloves, minced
  • 1 cup coconut milk
  • 1/3 cup chunky peanut butter
  • 1/4 cup peanuts (any kind, I used roasted salted), chopped
  • 1 tablespoon lime juice
  • 1 tablespoon fish sauce
  • 1 teaspoon tamari
  • chopped peanuts for serving
